Spanning some 450 hectares in the beautiful Braidwood region of NSW, we've turned challenge into opportunity. With a median rainfall of just 660mm per year, we've proven that regenerative farming transforms landscapes.

Our approach is simple yet powerful: healthy soil creates clean water, diverse ecosystems, and nutrient-rich food. Through holistic management, we raise premium cattle and prime lamb alongside truffles, yabbies, garlic, timber, and native grass seeds.

Every practice at Jillamatong prioritizes the land's vitality.
The result?
Happy, healthy animals and exceptionally flavorful, tender and (nutrient dense) meat that reflects the richness of our regenerated soils.

We holistically manage cattle and prime lamb, as well as truffles, yabbies, garlic, timber and native grass seeds. Ecologically sound land management practices mean healthy, happy animals and fully flavoured, tender meat.
